Dear Nesties - So there is this lady called Jenny Renny and she does these "readings" over the internet about when a person will conceive, when they will deliver and what sex the child will be. She even does what color hair/eyes when she gets a strong feeling. She predicted yesterday that this girl on Getting Pregnant who has been trying for a long time would get a positive this cycle. She just tested this morning and got a positive. I know it's probably coincidence, but wow - a little amazing still. - Leslie

Dear HP OMHs,
DH and I have been watching all the movies to prepare for Thursday. We watched 1-4 on Sunday and last night we watched 5. Tonight we will watch 6 and tomorrow we will watch 7 Part 1. We have tickets Thursday for the midnight show. I am both excited and sad all at the same time. Once I see the movie on Thursday - it will all be over.

I was watching 5 the other night and I got really sad because I realized it was going to be all over this week. I am excited to see the movie but sad that there will never be another HP midnight showing or midnight book release.
We are doing the double feature 7.1 & 7.2 on Thursday.

I was not a huge HP fan (didn't see any of the movies or read the books) before I met DH. He wanted to see the 6th movie and 7 part 1 so I went with him. I caught up on the first 5 movies this weekend, and read the online "cliff notes" on wikipedia so I won't be so lost. I'm actually interested in reading the books now!

I had a wedding filled dream last night. Apparently our wedding in 2009 was only to have the paper's signed and we were supposed to have the full blown wedding on our first anniversary but the day of, DH had no recollection of it so it didn't happen even though we had everything booked. Lauren wanted to go to the park with Chris and her mom to do her recaps for WB and wanted me to take a picture of her while she was doing it. Then Lynn Michelle really loved my pillow case and ate my jelly beans while waiting to shoot the couple who took our spot for the wedding. Completely weird all the way around.

Last night I attempted chicken enchiladas from a recipe from a family friend. They weren't bad, but they weren't great either. Do any of you have a tried and true enchilada recipe? DH and I both love them, but none of the recipes we have tried have turned out that great.
P.S. We like beef or chicken enchiladas best!

Dear Jaymi, That is the funniest thing I've read in a while - I'm glad to know I'm not the only one having weird wedding dreams lately! I've also been having bad dreams about DH - I can never remember what happened, but I wake up feeling sad, like he is mad at me or something. I hate when dreams weird you out while you're awake
Dear HP girls... I am sad too! I've never done the midnight stuff, but I really like HP and I'll be sad that there aren't any more movies. I wish they'd just continue every couple of years with a new story about the next year of his life, all the way until he's old. That would make me happy.

I've resorted to a casserole style too when the tortillas would break. I've always been jealous of restaurants because they seem so perfect. But I've learned that white corn tortillas are more fold friendly than yellow and Michelle shared the tip of boiling them in water before folding.

Our A/C stopped working sometime after midnight. I was so miserable. It got up to 89 in the house. Sometime after 5am it started working again. It was 74 when I woke up. I didn't sleep much and because DH brought 5 fans into the room when the A/C stopped working I didn't hear my alarm and woke up 20 minutes after I was suppose to leave. Morning didn't start off so great and I am in desperate need of a nap. DH is going to have his cousin come look at the A/C today and see why it randomly stopped working and then started back on it's own again.

Really long but easy beef enchilada recipe:
Brown 1-2 pounds ground beef (depending on how meaty you want it. I usually do 1). Season however you like, plus a fair amount of cumin. I use garlic, salt, pepper, and onion. Drain & set aside.
In a saucepan, heat 2 cans cream of mushroom soup & 1 soup can of milk. Also set aside.
Set up your assembly line: meat, soup, grated cheddar cheese (I like LOTS ? like, a 2 lb bag), and chopped onions if you prefer.
Now for the corn tortillas? You?re going to cook one at a time, and then make that enchilada, and then cook the next one. In a skillet, put about half an inch of water and a lot of chili powder, so it?s dark red. On Medium heat, cook the tortilla about 5 seconds ? much longer and it will fall apart.
To assemble, if you want real enchiladas: place one tortilla in a baking dish, with one side of it folded up against the side of the pan. Put a little bit of meat in there, then some cheese, a little bit of soup, and onions if you want them (You don?t want it too full.) Wrap it up, and do the next one. I try to reserve a big spoonful of meat for the end. When you have your pan full of enchiladas, sprinkle the top with lots of cheese and your remaining meat (and more onions if you want), and then pour the soup over the top. Bake it at about 375 until it?s hot all through and the cheese is melted, about 20 minutes.
To assemble, if you are lazy and want a casserole: Cook the tortillas the same way. Layer tortilla, meat, cheese, soup, repeat. I usually do 2 layers, and then lots of cheese and soup on top. Bake the same way.
Also, you can freeze the casserole. Just move it to the fridge a couple days before you want to eat it, and then bake for about 45 minutes since it?s cold all the way through. I always stick a knife in it to make sure it?s all the way hot, and then it?s ready!

I WISH I had the movies to watch to prep for 7.2, but I'm holding out for a box set (preferably on Blu-Ray... thinking Christmas this year). I have my midnight ticket wtih my best friend/HP buddy.
SO EXCITED - but it truly is bittersweet. I KNOW I'm going to cry.
I've read all the books twice (except 7 - only read it once... it's due for a re-read), seen the last 4 movies at midnight - and more than once in the theater. My HP buddy has almost half of her calf tattooed in HP themed art (she's an artist) - and I plan on getting some HP homage tattoos, too.

Dear Nesties, I had a dream the other night that I gave Tiffany my wedding ring to clean for me. In my dream, it wasn't my ring at all--my band looked just like BL's and my E-ring had 3 diamonds instead of 1. Tiffany returned my ring to me with a nice plastic cover over the diamonds so they wouldn't get dirty. So thoughtful!

I was almost late for the first day of class this morning, and I'm pretty sure that's the quickest I've ever made it to UTA, and I know I broke every speed limit in the process. The prof has a reputation I've heard of locking the door at 8am, and giving quizzes at 8am on the dot and if you're not there you're screwed.
She didn't lock the door, but sure enough, there was a quiz! On the first day! I literally ran in just in time to take the quiz.
I'll be getting up 30 minutes earlier tomorrow.
