Stupid veggie conversation/question
After we had green beans or broccoli for a dinner veggie for around the 5th time in a row, this conversation ensued between me and my veggie-hating DH...
DH: You know I will eat other veggies besides green beans and broccoli.
Me: Like what?
DH: Corn.
Me: That's not green.
DH: Lima beans.
Me: That's not good.
DH: Well, what else is there?
Me: Um...
I am drawing a blank here. I've made zucchini and summer squash and bell peppers and DH tolerated them for a little while, but he doesn't like them. What kind of green veggies do you serve with dinner?

Snow peas are delicious in a little butter with salt.
Spinach, kale and collards are delicious, if prepared the right way. Spinach is best as a salad or slightly wilted with butter or olive oil, salt and lemon juice or nuts. Kale is good with white beans and a bit of bacon and collards are best southern-style: slow cooked with bacon or ham, onions and other flavors like here: http://www.myrecipes.com/recipe/southern-style-collard-greens-10000001932600/
If you're iffy on any of those a creamy gratin is a good way to test them out while still having some familiar comfort flavors in there.
And, not green but squash this time of year is a great side--butternut with butter, a touch of cinnamon and the tiniest bit of brown sugar or honey. YUM!

asparagus, cauliflower, peas, brussel sprouts, spinach, salad, squash, zuchinni, carrots, beets
what's wrong w/ corn? I don't think its the most nutritious veggie every but its not bad.
I could personally eat brocolli every night
My go to sides are-
Brussels sprouts roasted with balsamic vinaigrette
Asparagus sauteed in a little garlic
Green beans and slivered almonds
Sauteed cabbage with a can of rotel
Plus I get the steamfresh bagged veggies a lot.
Hand him the pan and make him cook the spinach!
Lol! Yeah he said "I'll eat spinach if you let me cook it". If I let him? Lol, it's not like anyone is stopping him from cooking!

Ooh, I forgot about roasted brussel sprouts!
My standard go-to veggie sides:
- Sauteed bok choy (baby or regular)
- Spinach salad or regular salad
- Roasted broccoli
- Sauteed zucchini
- Sauteed green beans (wow, I saute everything.)
- Braised cucumbers
- Greens ... kale, cabbage, chard, spinach, sauteed in garlic, chicken broth and other yummy stuff
- Roasted Brussel sprouts (seriously, I hated Brussel sprouts before this recipe)

Non-green veggie sides
- Roasted Sweet Potatoes
- Roasted Cauliflower or mashed cauliflower
- Panzanella salad (tomatoes, olives, red onion, basil, mozzarella, fresh croutons)
- Roasted turnips
- Roasted cherry tomatoes
I often make dishes that incorporate veggies that I wouldn't serve plain. I.E. I hate cooked carrots, but I often grate carrots and zucchini and add them to spaghetti sauce. I also make shrimp stir fry or etouffee that has bell peppers and celery in the sauce. I figure if there are enough veggies in the dish, I don't have to serve a separate side dish.
