Give me your best winter squash recipes

I feel like I make the same things over and over. Give me some new ideas!

 

Last night we had acorn squash stuffed with quinoa and it turned out well. I roasted the squash and added spinach, mushrooms, and cheese to the quinoa. Good stuff.

  • Martha just had one where you roast & puree a squash, then make lasagna with bechamel and thin fresh pasta, alternating the puree and bechamel in layers.

    Defffinitely making this for Thanksgiving.

  • I usually cut butternut in half and roast in the oven on a cookie sheet w/ about half inch of water until a fork goes into the soft squash (usually an hour). I scoop the squash in a bowl and mix it with some butter, cinnamon and a little bit of brown sugar. Yum!

    FI made a squash mash the other night that was awesome with red kurie squash, acorn squash and sweet potatoes. He roasted the red squash and acorn squash in the oven like above and grilled the sweet potatoes. He left chunks in the squash and mashed them all together with some olive oil and brown sugar and butter and yum! Similar recipes, one was chunky and the other was not.

  • I make butternut squash soup by roasting squash, apples and an onion, pureeing with vegetable broth and then adding greek yogurt instead of heavy cream.

    I like this idea. Does this work well? Does it separate at all?
