  • Whew, it's done! I think it went well, even though I was sooo nervous. Now I wait for another 3-4 weeks and hopefully they'll want me to come in for an in-person interview. Thanks again for all your well-wishes!

    ETA: My reward for getting through it will be watching the last Harry Potter movie for the first time after dinner tonight.

    i've been awful about getting on here the last few weeks. Work and house hunting has been keeping me ridiculously busy, throw in the running around we've been doing because DH birthday is tomorrow and you've got a full schedule!  i do enjoy the humor though when i do find the time to get on here and stalk a little. :)

     Thanks for all the advice.  My registration is due anyway, so I can get that all done at once.  We're trying to hold out until we can get a house in Pampa so we don't have to change everything twice.

  • I've just been asked to bring potato salad to James' family Thanksgiving dinner... and the one time I made it, it wasn't that great.  Anybody got a good recipe?  Otherwise, I'm totally going to buy some at the store and dump it in a pretty bowl and take it, and claim it as my own :)

    Leslie - I know what you mean. I read it over there as well. It annoys me, but not enough to say something. I do that with a lot of things though. I thought the girl who go pissed about the advice to POAS was kind of funny honestly. She didn't even know for sure except that her phone said it and gets mad when people tell her to just verify it. Your response was very appropriate.

    I'm glad you thought it was appropriate. I don't normally let myself be that mean but it was sheer idiocy. I mean seriously, why ask a bunch of girls who haven't gotten pregnant how to tell your husband who isn't ready for kids that you haven't taken a test but think you are knocked up?

    I think her biggest problem was not realizing what the board was there for. It's for people trying to get pregnant not people who are 99% sure because their phone told them so. Sorry couldn't help myself.

  • I have considered signing up for December, but I haven't full decided yet.

    I went to the doctor and she said its just a virus (which is good that it's nothing worse), but now I just have to wait for it to pass.  There's not really any medicine that will help :-(

    Angie, I would seriously buy it from the store.  It does not even seem worth it to go through all that trouble.  My dad and grandma had an in depth discussion on whether potato salad was cheaper to make or to buy; they both have cooked for large groups over the last few decades.  My grandma seriously believes it's cheaper to make it and my dad says otherwise.  She will probably go to her grave with that thought.  Discussions in my family are entertaining Stick out tongue  Sorry for the side story, it just made me remember all of their discussions...how silly.

  • I like making potato salad, but I'm weird like that. I also don't usually use a recipe.
  • Angie- This is my aunt's recipe and it is awesome. I also included her sweet potato casserole recipe because it was the next one on the document and is awesome and very timely for T-giving. Depending upon the number of people you are serving, you might need to scale it down a bit.

    Potato Salad

    20 potatoes

    1 ? large onions, chopped

    2 green bell peppers, chopped

    5 boiled eggs, chopped

    1 pound fried bacon, crumbled

    1 ? jars Hellman?s Mayo (no other will do)

    ? cup sour pickle juice

    2 Tbsp red wine vinegar

    2 Tbsp bacon grease

    Salt

    Pepper

    Sprinkle of sugar

    Wash and boil potatoes whole in their jackets then cool somewhat. Remove skins from potatoes and mash using hands. Place in large bowl and add all other ingredients. Mix together and then salt, pepper and sugar until you get it the way you like it.

     

    Sweet Potato Casserole

    Temperature: 400? / 425? (see notes)

    Bake Time: 30 minutes

    3 cups mashed sweet potatoes

    1 ? cups sugar

    ? stick butter, melted

    1 cup canned milk

    ? tsp nutmeg

    ? tsp cinnamon

    1 tsp vanilla

    ? tsp salt

    3 eggs, beaten

    Topping

    1 cup Honey Bunched of Oats cereal

    ? cup brown sugar

    ? cup chopped pecans

    ? stick melted butter

    Set oven to 400?, scrub and wash six medium sweet potatoes. Place on greased cookie sheet and bake until done. Increase oven temperature, combine all ingredients, pour into casserole dish and bake for 15 minutes. Remove from oven and spread topping onto potato mixture and bake an additional 15 minutes. Remove and top with mini marshmallows. Return to oven and bake until brown.

    Rachael Ray has some good ones I've wanted to try--she even has a sweet potato salad recipe that can be served cold.

     Ohh. I love fresh homemade potato salad.  I can't ever eat it from the store b/c my mom's ruined me.  She always just cooked red potatoes quartered them (or more if larger) a little butter while still warm, salt, pepper, garlic salt to taste.  Then added mayo and green onions. 

    I am not a fan of green onions so I usually omit or add chives instead.  You can also play with herbs and mix thyme, dill, rosemary or basil in with the mayo.

    Mmmm, now I want spaghetti AND potato salad.   But if you aren't comfortable making it, could you ask to substitute a different potato dish like mashed, roasted, or twice baked potatoes?
