If something was to happen to the world and you were given a choice for your very last meal and it had to be healthy what would you eat?

    I take out the oil and cook everything on low in the crock pot for 8 hours instead.

  • I love a good salad.

    Grilled shrimp with couscous and grilled veggies.

    Vegan chili at Wild Cherries in Truckee, CA.

  • Salmon, butternut squash, peas. Maybe add some baked sweet potato fries. Yum!! Also watermelon for dessert. Possibly a fruit smoothie. Just because it's healthy doesn't mean I wouldn't want a lot of food!

  • My fave is grilled chicken breast, seasoned with a bit of cajun seasoning, topped with avocado salsa (avocado, red onion, lime juice). It's a warm weather staple in our house.

  • Does a Greek salad count?
  • We make some version of taco salad with beans all the time.  Last meal = add lots of guac :)

    Last night I made sweet potato black bean enchiladas for the first time.  I left the cheese off (trying to dial down on the dairy a little bit) and they were still amazing.  Which for a cheese lover, is saying a lot! 

  • My most favorite healthful meal would probably be spaghetti [squash]. mmm.. I could eat that every.single.day. 

    That or vegetarian chili from the crockpot... When H is gone those are my like.. only two meals over and over again.. haha 

  • Steak salad. Tri-tip steak seasoned with Cavender's, grilled and sliced. Served on top of greens tossed with balsamic vinaigrette, toasted pecans, feta (or goat cheese or bleu cheese), and assorted veggies. Add a side of grilled veggies or corn on the cobb. Eaten out on the back deck in the sunshine. And a glass of wine for dessert. Wink
