Fritatta Recipe

Anyone have one? I've never made one, but we have 3 dozen eggs and I thought this was a good way to utilize them. I am currently thinking, cheddar cheese, potatoes and onions, but that's all I have right now.

  • I don't have an actual recipe, I just throw in whatever is around - carmelized onions, chopped bell pepper, cheeses, bacon, herbs, scallions, etc

  • Your idea sounds good to me.  My mom just made a quiche with tomatoes, onions, bacon and cheese.  It was so delicious.

    I make a breakfast casserole every Christmas that includes Italian sausage, shredded hash browns, fresh spinach, diced onion, shredded cheese, and a dozen eggs.   I usually get bulk sausage and saute it first.  Then I saute the onions/spinach a little bit in the sausage renderings.  Add to a greased baking dish and let cool.  Then add the hash browns and cheese, mix everything up and pour the scrambled eggs over the top.

    This is one of my favorite dishes. I usually add quinoa for whole grains and keep the egg count to 5 or 6. This will last several meals and is great at room temp for lunch the next day.  http://localfoodlady.blogspot.com/2012/05/eggs-asparagus-goat-cheese-oh-my.html

    Thanks everyone for the great ideas. Quinoa is a BRILLANT addition, Brooks won't eat it, but I'm planning to start sneaking it in, and he LOVES eggs, so if this dish is a hit I may try to add quinoa next time.
