Tasty Tuesday?

Hey ladies!

There is no Tuesday post yet. How about Tasty Tuesdays, we can talk about a new recipe we have tried or want to try? We haven't done a WFD post in a while and well, I love food.

I have two:

I tried a recipe fo salmon cakes last week. Kind of like crab cakes but make with salmon, they were AMAZING! I made them with angel hair pasta with butter and parsley and a mixed green salad with sun dried tomato dressing. Here is the recipe: http://www.weightwatchers.ca/food/rcp/index.aspx?recipeid=98151 

Also, tomorrow I am trying a new carrot and leek soup recipe. I love fall because I love to cook casseroles and soups, and it keeps DH's tummy happy too :)

  • I've been dying to try these, but just haven't had the time.  I have a friend's baby shower coming up so maybe I'll make them for that.

  • I made these enchiladas as part of my freezer meals. They were pretty labor intensive but SO worth it. H ate one super hot out of the oven and said they were ALMOST as good as his mom's. I'll take it!!!

     I used olive oil instead of canola oil and I used the (super freaking spicy) peppers we had on hand instead of buying jalapenos. I would also suggest making a bit more sauce. I doubled the entire recipe and had enough sauce but I would have liked to freeze some for the day of.

  • On Saturday H informed me he would be working at the other end of the state all week AFTER I went grocery shopping! So I basically froze everything and have been eating leftovers (that we would have had for lunch at the beginning of the week) for dinner.

    I did make an awesome bacon and cheese quiche over the weekend. Whisk together 6 eggs, bacon pieces, 1 cup milk, 1/4 cup grated Parmesan & 3/4 cup shredded cheese (I used Mexican blend). Pour into pie crust (I used store bought Pilsbury) & top with additional 1/4 cup shredded cheese. Bake @ 350 for 50 minutes.

    I also love the fall and being able to make soups, chili, etc! I was planning on making chili this week and it would have been PERFECT today as it's a very dreary day here in Western MA. Oh well, it's it the freezer until next week!

  • I want to try and make a roast here in the next few weeks. I have never made one before and have been looking for new things to make in the crockpot. If you have any good ideas for a crockpot roast send them my way.

    Also my mom made pulled pork in her crock pot the other day so I plan on trying that soon.

  • I'm so basic: struggling with my first beef stew tonight. Why is it not getting thicker? I'm trying to resist adding a packet of gravy mix lol. Maybe that will thicken it up. I hate cooking so much... But since I'm stuck doing it for now, I'm enjoying seeing everyone's recipes  :)
