  • Monday: Spaghetti and garlic bread

    Tuesday: We moved Wino Wednesday to Tuesdays, since one of the regulars has a class, so no cooking tonight.

    Wednesday: Beef filet in a wine sauce over noodles, green beans

    Thursday: Lemon pepper chicken, rice, broccoli

    Friday: Meatloaf, au gratin potatoes and corn.

  • I'm seriously hating cooking right now.  Beyond our normal pickiness and eating restrictions, my husband has decided that he's not going to eat any carbs on weekdays until May.  So I basically have to cook 3 different meals every day, half of which gets noses stuck up at it.

    Monday - Adobo chile acorn squash over salad, grilled chicken, egg noodles

    Tuesday - Eggplant masouka (sp?) for the grown-ups, grilled sausages for the kiddos.

    Wednesday - I'm going to try to make Asian cabbage wraps.  The picture in my W&S cookbook looks amazing but maybe a little beyond my culinary skill.  If that fails, I've got a pasta/chicken back-up.

    Thursday - @booneybear's halibut with lemon fennel salad, chicken tenders for the kiddos.

  • Last night was breakfast for dinner. 
    Tonight is pasta and meatballs with a salad
    Tomorrow will be pineapple chicken in the crockpot
    Thursday is leftovers because I have doubleheader volleyball at 7:00 and 8:00
    Friday is payday, so I'll want to go out.
  • Sunday: Trout w/ Jasmine Rice and vegetable blend
    Last night: Hummus and more (we grill chicken and saute a bunch of vegetables to put on top of some hummus)
    Tonight: Beer (well and some light appetizers)
    Tomorrow: Loaded baked potatoes and chef salad
    Thursday and Friday: Hoping to get inspiration from this post so I can figure it out..

    It's yummy and super easy!  I get most of my recipes from Six Sisters Stuff.  They also have a Cafe Rio Pork recipe if you have that on hand instead of chicken.

    Tuesday: I have yoga, so I think grilled cheese and tomato soup

    Thursday: ham steak and cauliflower tots

    Friday: sloppy joes and cottage cheese

  • Monday - hodge podge of antipasto that I picked up from the Italian specialty market.

    Tuesday - Swedish meatballs with egg noodles

    Wednesday - English muffin pizzas

    Thursday - Cheese Ravioli with red sauce

    Friday - Chicken enchiladas

    Weekend - rice and lentil beans/leftovers/fend for yourself

     

  • Last night we had a ton of things to do so we did a frozen pizza.

    Tonight - Something with ground turkey (meatloaf, tacos, meatballs?) I'm not sure yet, sweet potato fries, salad.

    Wednesday - Leftover turkey meat, roasted veggies, salad.  

    Thursday - I am picking up 40lbs of boneless chicken breast that I ordered ($1.55 a pound!!) so we will be having chicken most nights for the foreseeable future.

    Zaxby's is legitimately absolutely delicious.  Whenever I have to go to SC for work, I get Zaxby's at least once.

  • Sunday: Homemade chicken nuggets, sweet potato fries, and garden garlic vegetable soup
    Monday: Salmon with anchovy-garlic butter, mac and cheese, more of the soup (that was night 3 and there's more in the freezer.  Too bad it's just eh).
    Tuesday: Wasabi crusted chicken breasts, baked potatoes, either broccoli or beans.
    Wednesday: Uh...might have more chicken.  I forget what's in the freezer
    Thursday and Friday, who knows.

    @SRodi811 - thanks for the offer! I may just bounce a few things off of you at some point.

    It's actually going well! I decided to ditch wheat and sugar for January and I've stuck to it 100% so far! I'm noticing some big differences in terms of how I feel. The big challenge will be to keep the momentum going and to find new recipes so that I don't get bored. 

    Aside from that, the only other challenge I've noticed is trying to stick to it when I'm not in control of the food (2 birthday parties so far with 2 more this week... that kind of thing). Because it's not a medical necessity in my case, I don't feel it's right to make special requests, so I just eat what I can, if I can, and then eat when I get home if I still need to. That part kinda stinks, but it's really the only struggle I've had so far.
