Honestly, to me it sounds like she has BPD (or maybe is bipolar). Common traits of people with these disorders include projection (as in saying things like, "why are YOU mad? why are YOU yelling?" to people who AREN'T when they ARE), being overly-sensitive, painting everyone & every situation as black (bad) or white (good), over-reacting to things that wouldn't bother most people, mood swings, placing blame (things are NEVER his/her fault), flip-flopping between being narcissistic & having low self-esteem, etc.
In that case the best thing you can do is try not to take her manic episodes personally, and support her when she's calm.
