Re: What's for dinner?
Our neighbors who moved out of the complex and into a house the next town over invited us for dinner.
He is an awesome cook of ethnic foods, tonight is some sort of super spicy Ethiopian food.
Spending a couple hours with their adorable two year old and eating delish food that I don't have to cook sounds pretty awesome to me right now!
Yum. We're eating left overs of beef tenderloin. We're going camping this weekend and have to eat up what's hanging around so it doesn't go bad.
Poor man's meal?

I have gotten out of cooking all week so far. There's a good chance DH will be home late again tonight, too.
I'll save him a plate of tonight's dinner. That way if he's hungry when he gets in he can nuke it.
Poor man's meal = depression era food that means 'throw it all in the pot'
in MY family it's a 'stew' with 'white gravy' (think flour + butter + milk ) + spices over potatoes and veggies (usually peas) and ring bologna .
(most 'recipes' you find for it use sausage instead of bologna and don't make the water/milk into gravy--my great grandparents must have had more flour than eveyrone else :-P

I started on butternut squash risotto and then realized what the rest of the week looked like, lol. Maybe Sunday.

FI and I were going to go out tonight, but he got home late, so we're going out tomorrow night instead. Definitely for wings and beer. My comfort food.
Tonight, probably some spaghetti. I haven't had the energy to cook for a few days with all the ridiculousness going on here, so I bought a jar of sauce and threw noodles in a pot. And OMG, the sauce is sooooo good, much better than I was expecting. It has caramelized onions in it. mmmm.
I promise my family I'll cook this weekend though.
Maybe a pot roast with roasted potatoes and broccoli.
We had some homemade chicken soup and grilled cheese (which Hart lurved)
Kinda warm for soup today, but we had some succatach that had to be used up - so soup was all I could come up with
