  • We are brokeassbroke until I get paid NEXT WEEK so it's beans and rice with fried eggs, salsa and tortillas. Again.

  • Our neighbors who moved out of the complex and into a house the next town over invited us for dinner.

He is an awesome cook of ethnic foods, tonight is some sort of super spicy Ethiopian food.

Spending a couple hours with their adorable two year old and eating delish food that I don't have to cook sounds pretty awesome to me right now!

Yum. We're eating left overs of beef tenderloin. We're going camping this weekend and have to eat up what's hanging around so it doesn't go bad.

  • Seasoned cod sauteed with tomatoes, mushrooms, onions, and fresh spinach.  I haven't decided on the side yet.  Maybe new potatoes.
    This is my siggy.
  • Chicken with vegetables and buttered bread.
  • either pancakes or leftover 'poor man's meal'

    Poor man's meal?

    Ethiopian sounds delicious.

I have gotten out of cooking all week so far. There's a good chance DH will be home late again tonight, too.

  • Grilled Fajita Chicken (marinating now) with mixed veggies and egg noodles. H is stuck at a lab (research center) until midnight. He can't even leave the station so I packed him some lasagna & veggies. I don't know if they have microwaves at the station, but cold lasagna isn't that bad right?

I'll save him a plate of tonight's dinner. That way if he's hungry when he gets in he can nuke it. :)

  • Poor man's meal = depression era food that means 'throw it all in the pot'

in MY family it's a 'stew' with 'white gravy' (think flour + butter + milk ) + spices over potatoes and veggies (usually peas) and ring bologna .

(most 'recipes' you find for it use sausage instead of bologna and don't make the water/milk into gravy--my great grandparents must have had more flour than eveyrone else :-P

  • Nice. I love the 'clean out the fridge' meals. In our house, we call it a super salad and throw anything and everything over a bed of greens.

  • veggie burgers and oven fries and green salad.

I started on butternut squash risotto and then realized what the rest of the week looked like, lol.  Maybe Sunday.

  • Leftover lasagna with some crazy feta and Italian dressing on top. Sounds weird, tastes pretty good though and gets rid of leftovers!
  • Rice and veggies and sausage. And whatever else I decide to throw in it.
Warning No formatter is installed for the format bbhtml
  • Grilled chicken for me and shake n bake for hubby & kids. Roasted red skin potatoes, corn, asparagus, salad, and fresh french bread. (I can't have wheat so the good stuff is not for me)

See, this is why I need to have children.

  • FI and I were going to go out tonight, but he got home late, so we're going out tomorrow night instead. Definitely for wings and beer. My comfort food.

Tonight, probably some spaghetti. I haven't had the energy to cook for a few days with all the ridiculousness going on here, so I bought a jar of sauce and threw noodles in a pot. And OMG, the sauce is sooooo good, much better than I was expecting. It has caramelized onions in it. mmmm.

I promise my family I'll cook this weekend though. Stick out tongue Maybe a pot roast with roasted potatoes and broccoli.

  • We had some homemade chicken soup and grilled cheese (which Hart lurved)

Kinda warm for soup today, but we had some succatach that had to be used up - so soup was all I could come up with
