Thursday Randoms

I'm annoyed that I had a months worth of contacts left and an appointment scheduled for a new prescription, but I tore not one, but two lenses in one week.  I haven't torn any in at least a year and now I have to wear my glasses until a trial pair comes in to tide me over until my appointment.  After having contacts so long glasses (that I only wear for like 10 minutes before bed) is such a huge pain in the ass.  And of course, I had to get the glasses with the super thick frames so that someone could practically sneak up beside me and I would have no idea they were there.

I'm hungry and I want some ice cream.

  • I made a miracle mac n cheese last night using random shit I found in the kitchen. I had no heavy cream, no grated parm, no bread crumbs. I used lowfat milk, whatever shredded cheese I had left in my fridge, and crumbled ritz crackers. And added bacon, because bacon makes everything better. 

    My husband ate one bite and was like "How did you do this?"

    I love when this happens! Some of my best meals have been stuff I have just thrown together. Granted, most of my epic fails have happened that way too!

  • In two weeks we are going on a yearly vacation with the in-laws.  I'm dreading it.  There's a kitchen in the cabin but they love to go out to eat for every meal even when they are not on vacation.  I was diagnosed with Celiac in January and so far I've had really miserable experiences at restaurants.  For them family time is meal time, and I've already gotten guilt for expressing my opinion about cooking in the cabin more often this year. 
    But I feel like their want to go out for every meal trumps my health and I don't know what to do about it.

  • I have a friend who set up a g2g the other day and a little while after we said hi she told us (me & another pregnant friend) that she has SHINGLES!!!!!!! are you kidding me...why would you initiate a g2g with 2 pregnant friends. Anyway today we told her we were going to pass/stay away for a while to not take any risks and she is taking it so personally! grow up and have some serious consideration for others... ::really annoyed:: 8-| :-L

  • I'm actually a decent cook, but I'm the worst at following recipes.  I nearly always miss a step/ingredient, but I'm usually able to recover.  Thankfully J knows nothing about cooking so he wouldn't even really noticed, but he's CONSTANTLY asking me if I've read through the whole thing and did I get it all.  It only grates on me because I know it's true.

    I like to fudge with baking all the time though. I have much better success with that.  Sweets are my thang yo.

  • Anth is a professionally trained chef, so food compliments are serious business in my house. We save them for when stuff is GOOD. I'm the baker and he's the cook, but last night he was threatening to make turkey burgers because there was "nothing else". 

    So pulling that mac and cheese out of my ass was like winning Olympic Gold.

    The first thing I was told when I had shingles was to stay away from pregnant and old people.  Most people treated me like I had the plague when I had shingles, but I never took it personally and I definitely never expected my pregnant sister to come hang out with me while I was sick. I would be really annoyed with her too.

    I have a little cousin who is obsessed with that show. Whenever we have potluck family GTGs he "chops" whoever's dish sucked the most. It's hysterical.

  • I have a friend couple that really like to cook, but they aren't chefs or anything.  And like I mentioned, I'm not Julia Child, but I can usually put stuff together pretty well.  I HATE cooking for them because it's like if I don't cook with white truffle oil or balsamic vinegar aged like 1000 years, it's just not worth commenting on.

    I make a Bailey's chocolate cheesecake a couple of weeks ago that was like a rock star and it was practically eaten in silence. That shit was good and you know it!

  • My older sister wants to leave her husband. I don't know her hubby that well, but he works three jobs so my sister can be a SAHM. Also, he adopted my neice and is raising her as his own kid. I asked my sister what he did and she said "nothing. He's a great guy. I am just bored." I suggested she spend more time with him (he sits at home with the kid or plays video games while my sister goes bar hopping with her friends) and she said he is just not a fun enough person for her. He is SUCH a good husband to her. I feel bad for him. She told him she wants to leave and he is actually just letting her live there while she finishes school and finds a job/saves up money. Poor schmuck.

    That would make me crazy. We are so not like those truffle people. Anth's favorite dish ever is chicken chimichangas. LOL.
