NBR: Cucumbers

What's your favorite thing to do with cucumbers?

I have about 5 or 6 cucumbers that I need to eat from our CSA.  We made pickles with the bucketful we had last week, but 5 or 6 isn't enough for another batch.  I'm not a huge fan of them myself, but we're having some friends over for dinner tonight and I'd liked to try to use them all if possible.  I will have up to an hour after work to put something together.  I could put together a salad, but I'd still have 4 or 5.  What do you think?  Pinterest isn't really coming up with anything super appetizing or doesn't involve some crazy ingredients.

    I love making greek pasta salad this time of year. Depending on how much you will eat, it eats up cukes pretty good.

    I also really enjoy Blueberry cuke smoothies.

  • Stole this from one of my favorite bloggers, not sure if it'll work in your case but it'll use up at least one or two more in addition to a salad. It's my favorite way to eat cucumbers and I don't usually like them. Peel a cucumber and cut into thin slices. Throw them in a bowl and salt & pepper them to death. Throw in the fridge for 15 mins or so, covered with plastic wrap. Once you remove them from the fridge, pour white vinegar over them and serve.

    Whether or not you find your own way, you're bound to find some way. If you happen to find my way, please return it, as it was lost years ago. I imagine by now it's quite rusty.”

    No, but seriously. I love these:

    Mix together 8 oz cream cheese and 1/2 cup mayo, add in a packet of dry zesty Italian dressing mix, and combine.

    Slice a baguette, fairly thin slices

    Use a vegetable peeler to slice the cucumber paper thin.

    Spread mixture on baguette slices, fold up a cucumber strip on top of that, and then sprinkle with dill.

    So good, and pretty, too.

    Make a greek salad. 

    Big chunks of cucumber, big chunks of tomato, slices of red onion, kalamata olives, vinegar, olive oil, lemon, salt, pepper. 

    ETA: Oh and LOTS of feta. Of course.

  • When I was in Amsterdam I had a sandwich with goat cheese, sliced cucumbers, and pine nuts drizzled with honey.  It is seriously the best thing ever.

    Peel and slice the cucumbers and let them soak in a mixture of about 1/4 cup of rice vinegar with about two teaspoons of sugar (add some fresh dill if you have it).

  • If it was me I'd just slice 'em up and eat them plain with salt on them. yummmm! 

    My husband makes creamed cucumbers, but I'm not sure what exact recipe he uses. You just make a simple dressing with mayo, vinegar and sugar (like you would for coleslaw) and some salt&pepper and pour it over the cucumbers and let them sit for a while.

    I usually make up a big batch and keep it in the fridge for lunches. J eats it constantly when I have it in there. Plus, you can get the Greek feta salad dressing and just use it instead of making your own. I add extra feta though.

    Oh I love doing this too!  Cucumber vinegar salad.  Yuuuum.  I also love to just dip cucumbers in some hummus.  I could eat way too many cucumbers that way.

  • Wow, I'm so not as adventurous as some of the people here. I've got some fantastic ideas to try now!

    I typically eat cucumbers plain or cut up in a salad. I love them by themselves, so I never thought to experiment with them!
  • I usually just peel a few and leave a few with the skin on, slice them and throw them in a bowl with italian dressing.  After it sits for a little bit, voila!  Cucumber salad.

  • Um, I just eat them as a snack.  I love cucumbers.

    Also, Polish Cucumber Salad.  My grandma used to make it all the time.  Cucumbers, sour cream, dill, salt and pepper.

  • I like just peeling them, slicing and eating with a litte vinegar. 

    My new favorite thing is peeling them & chopping them up.  Taking a wrap and spreading laughing cow cheese on it, then putting the cucumbers on top.  Then put a few slices of deli turkey breast, roll up, and enjoy.

    My mind has dual citizenship in both the gutter and the real world. I can't help it.  O:-)

    Also - I use a kitchenaid to mix up the spread. You don't have to, but it's hard to get the cream cheese smooth otherwise.

    This is pretty much our "cucumber salad"  Soooooo good!!!
  • I like the greek pasta idea and the quickles. I also use cucumbers to make mango salsa - its amazing on talapia. I would also make cucumber sandwiches.
