  • oh man, i love love love bread pudding!  i dislike raisins, though, so it's kind of hard to find it without.

    i ate at a restaurant once that had blueberry bread pudding, it was divine!  i can't recall where though.

  • Confession:  I am just not excited about Thanksgiving this year, I kind of want it to hurry up and be over already.  My mom is not coping well with the recent diabetes diagnosis, she hates the restricted diet, craves carbs, isn't losing weight and is just generally depressed about it... so celebrating a holiday that's ALL about food--sugary, carby, yummy food-- with her isn't going to be fun. 

    We usually try to squeeze both my family and M's family in on Thanksgiving day but I'm just not sure it's going to happen this year.  I feel terrible not eating with my family since it's just my parents, my sister, her DH and kids.  But I think the two meals are going to be too close in time for us to make both.

    Plus M is on call this Thanksgiving so chances are he's going to have to drive his truck to both houses "just in case" he gets called which means I have to drive and therefore can't really drink. 

    Sorry to be a Debbie Downer, I'm just sad.  Anyone have any yummy diabetic Thanksgiving recipes?  No?  Yeah I didn't think so.

  • DH and I had restricted our diets a few thanksgivings ago to cut the carbs.  Turkey and roasted veggies were pretty much it.  We kind of tried to fill up on those, and watch portions closely where the desserts were concerned.

    That was the t-giving after my dad died, and the seriousness of diabetes and obesity was staring us in the face.  I guess we were kind of so scared that we were able to do it.

    Weight watchers has a pretty good recipe too, that uses puff pastry to lower the carb content. 

    (although, those are both pumpkin... I don't know if that helps)

    When I had gestational diabetes, if I wanted a not so great dessert, I made sure to eat a higher amount of protein to help off-set the carbs.  By eating the higher amount of proteins first it would help the carbs be digested and processed easier.  (just a little trick I learned a long the way. lol)

    I know some Drs focus on balancing carbs and protein or eating lower glycemic index carbs, it seems there are different methods....  Her Dr is pretty strict 30g carbs per meal.  Period.   Though she does have pills she can take if she knows she's going to over indulge. 

    I feel bad for her, but I also think she has a bad attitude about it right now.  But then, I'd probably have a bad attitude too. 

    I guess I just needed to vent.

    It was somewhere in Kemah... my assistant and I went there after that Extreme Home Makeover shoot day when it was blustery and freezing cold (we were SATRVING and by the time we got to the food truck on-set, there was ONE piece of pizza left, and we didn't want to eat it because that poor crew girl helping us really needed to eat something).  Hot delicious bread pudding never tasted so good.  I feel like it was Saltgrass or Babin's.

     

    Suzi, there are a lot of things you can do with the FF/SF pudding.  Perhaps she could "indulge"  on something like that?  There are still milk sugars to deal with, though, I guess.  My friend swears by the FF greek yogurt mixed with the FF/SF pudding packet (she likes chocolate).  It's something that gets too gummy i you make it then refrigerate, so making it on the spot is the best way to go.

    My dad is type 2. We've found some products at HEB that work really well for baking.  Smart Sugar, can be substituted for regular sugar and has the exact same taste.  We also use Ultragrain flour.  It has the texture and flavor of all-purpose, but the nutritional value and fiber of whole wheat.  Also, not baking related, Dream Fields Pasta is another great tasting product.  DH and I aren't diabetic, but I use all 3 of these products regularly.

    Thanks!  That's really helpful, I've been wanting to try and make some diabetic friendly desserts but didn't really know where to start.

  • I'm really sensitive to the taste of artificial and diabetic sweeteners, and Smart Sugar is the closest to the taste regular sugar.   Also, Splenda make brown sugar now, and I like that as well.

  • I started using the Barilla Plus pasta, made with whole grains and when I was regularly checking my sugar levels after meals it never made my levels spike.

    (just another alternative. :))

    Dreamfields is also great, it's a white pasta but structured so there's only a net 5g carbs/serving. It doesn't make my dad's levels spike but you can't overcook it otherwise it loses its low-carb magic.

    I sometimes overcook it too.  I really like the Dreamfields stuff.

     

  • If you were feeding 40-45 people, what would you serve?  (For Christmas, specifically... I'm hosting this year and I'm trying to start putting menu ideas together.  Obviously I won't be doing everything... But I will be doing the 'meat' or larger part of the meal and everyone else will bring things to go with it.)

  • i would deep fry a turkey, roast a turkey, bake a ham, and bake a beef tenderloin......and leave all the sides/rolls/deserts/appi's to everyone else.

    I would take one of the 5 Logan's Farms gift cards we have laying around from the last few years from K's rig and get a couple of hams and probably make a couple of turkeys.

    my cousin, a nurse, did one of mine and taught me if you pinch the skin really hard (she attacked me) it doesn't hurt at all. The only time I hurt myself was when I chickened out at the last second and poked myself too lightly and had to do stick it in twice.

    My kick ass nephew (the 11 year old who dressed as rick astley for halloween) just got back from a bigfoot hunting trip in OK. He went with his dad as bonding thing, at Cameron's request. They weren't interested in shooting bigfoot or anything, just seeing if he's out there. They stayed in a cabin that the owner said most people leave terrified in the morning from the noises (big foot screams and stuff) they hear at night. We're going over tonight to hear about the trip and I can't wait.

    **disclaimer-we are not a crazy family of bigfoot people, but I admit it's more fun to believe they exist then don't. there's no fun in reality sometimes.

    I would like a full account of his trip as well. I want to know if he saw bigfoot! =)

    they had a blast. it's a tiny town with one store and a dumpster. you hear things in the night, one night something stood behind them and snorted twice but they didn't catch a glimpse of what it was in the dark. Cameron swears he saw a dark tall figure about 13 feet tall (it was near a pole they later measured at 9 feet) staring at him. They found a huge footprint like track in the daytime. it sounded like fun actually, terrifying to be out in the dark with the unknown but still fun.

    This sounds SO fun.  What was the town called?  Is this some sort of package vacation thing the "town" puts on as a big tourist attraction?

    ha! the other day I was cutting Addie's finger nails and one flew at me when I trimmed it. She said, "it went in your nunnies." I said what are those? She said, "those hang-y down-y things." Thanks kid. I was even wearing a bra. She went on to explian that little girls had pointy ones like she had.

     

    HP and Harm-re naked  maternity photos, with how much time Matt spends checking himself out in the mirror I think he'd insist on being front and center for naked photos. Every time I see them I wonder, why are they sharing these in public? and what will that kid think when they see them one day?
